Of course everything in moderation as your mother told you ... The chemistry of sugars is based on alcohols, aldehydes, ketones, hemiacetal, hemiketal, acetal, and ketal formations. It is all organic chemistry of additions across a double bond. In this case, it is the C=O of an aldehyde or ketone. Of course, aldehydes can be oxidized. A few extra fun reactions can take place when we make phospho esters too.
The main review you will need here is hemiacetal/ketal and acetal/ketal formation. Make sure you know when the water must be removed and when it does not.
